As most of you know, I live with these two guys...and I have to make dinner for them every night. And the one guy that is my boss/employer/whatever says that my dinners are not good enough. That they need to be more inventive and just plain old better than they are. Soooooo, as most of you probably know also...I hate cooking, I hate anything that has to do with preparing food, and know absolutely nothing about it.
Alright, so the point of what I'm trying to say is, does anyone have any good dinner ideas or recipes that you wouldn't mind sharing? I would be so appreciative... Jeremiah 29:11 |

My best idea?
Take-out! (going for something like Mrs. Doubtfire here.) i've got one for you...it's definataly inventive...
Loaded Hotdogs.. you slice the hotdogs down the center...but not all the way through...then lay them on a pan open side down...broil them for 15 mins...then turn them over...put shredded cheddar in the middle...the put mashed potatoes in the middle...then top with cheddar cheese...cook until cheese is melted....then serve... You can also do this and put chili on them...you put that on the potatoes and under the chedder...then after you pull them out top with sour cream or cream cheese... I know it sounds wierd...but its really good... Image is overrated if it washes off in the rain.. |

Oh, and J.F.'s suggestion of Funyons (with the complimentary after-dinner Tic Tacs) just adds to the whole a la carte thing you're trying to achieve.

Now Kiersten, you didn't specify right up front that you needed VEGETARIAN recipes... Do you mean vegetarian as in no meat period? Not even dairy or fish? Or just no beef, fowl, pork, (I'd figure no pork since Buck is Jewish) etc.? Spinach-Stuffed Sole
Heart healthy doesn't have to mean plain cooking, as this special dish shows. Yield: 4 servings Serving size: 1 fillet roll 1 tsp olive oil 1/2 lb fresh mushrooms, sliced 1/2 lb fresh spinach, chopped 1/4 tsp oregano leaves, crushed 1 clove garlic, minced 1 1/2 lb sole fillets or other white fish 2 tbsp sherry 4 oz (1 cup) part-skim mozzarella cheese, grated nonstick cooking spray, as needed 1. Preheat oven to 400 degrees F. 2. Coat 10- by 6-inch baking dish with nonstick cooking spray. 3. Heat oil in skillet and sauté mushrooms for about 3 minutes or until tender. 4. Add spinach and continue cooking for about 1 minute or until spinach is barely wilted. Remove from heat and drain liquid into prepared baking dish. 5. Add oregano and garlic to drained sautéed vegetables. Stir to mix ingredients. 6. Divide vegetable mixture evenly among fillets and place in center of each. 7. Roll each fillet around mixture and place seam-side down in prepared baking dish. 8. Sprinkle with sherry, then grated mozzarella cheese. Bake for 15 to 20 minutes or until fish flakes easily. Lift out with slotted spoon. Each serving provides: Calories: 273 Total fat: 9 g Saturated fat: 4 g Cholesterol: 95 mg Sodium: 163 mg Total fiber: 2 g Protein: 39 g Carbohydrates: 6 g Potassium: 880 mg I can do all things through Christ who strengthens me. |

Baked Shells with White Cheddar
A grown-up compromise when the kids ask for macaroni 'n' cheese again. 1 1/2 cup skim milk 2 tablespoon cornstarch 1/4 teaspoon black pepper 1/4 teaspoon hot-pepper sauce 1 cup extra-sharp white Cheddar cheese 3/4 cup low-fat (1%) cottage cheese 8 ounce small shell pasta 1 package (10 ounce) frozen leaf spinach 1/4 cup scallions 1 tablespoon bread crumbs Instructions:1 Preheat oven to 400°F (200°C). Coat a 9-inch-square (2.5-L) baking dish with nonstick spray. In a saucepan, whisk milk, cornstarch, mustard, pepper, and hot-pepper sauce until smooth. Cook over medium-high heat, stirring constantly until sauce thickens and boils. Add 3/4 cup (175 mL) Cheddar and the cottage cheese. Cook and stir until Cheddar is melted. Combine cheese sauce with pasta, spinach, and scallions. Spoon into prepared baking dish. Sprinkle with remaining Cheddar and crumbs. Bake until hot and bubbly, about 20 minutes. I'm actually going to print these recipes out! I like spinach too, especially for salads. I replaced it for lettuce at my house and my kids didn't even notice!
