If you've ever been to a wedding reception, you may have tried these little round, brown, crunchy, cheesy things, aka "spinach balls."

Spinach, when not used as a salad, is best when it's concealed in other dishes, like quiche. Just big, glopping spoonfuls of cooked spinach, however, is really gross.

Gosh!! I have like so much to eat, see, and accomplish before the new year!SERIOUSLY! Haha But now I can mark off eatin spinach cuz I know I have tried it thanks to Lucie letting me know whats inside the food I've eatin. lol I seriously didn't know when I was visiting my cuzzins they made little frozen quichey things and they didn't tell me what was in it and NOW I KNOW! It was good too I like ate them all!

hmm I am tryin to think "Do I have any ideas" Im not a cook Im one of those waste all my money on fast food kinda girls. I also spend alot at Walmart... oo but anyways I think you should try pesto pasta!! All you need is: umm hold on lemme ask my mom..... ok chicken,noodles,vinegar,pesto stuf- ok thats TOO hard. I never knew how much work goes into my homemade meal but they sure are good! ok ok Onwards I say since I am such a good cookess haha NOT! I think you should stick with mac'and cheese ok like its the best. If they complain say eat it OR STARVE! Or give them a menu with the options of PLAIN mac' n cheese or mac' n cheese with BROCCOLI or the one with the bacon bits is pretty DEELISH Then it looks like you got somethin goin!SmileSmile There ya go!

alright girl i'm all about the mac and cheese!! i love it!! and subway rocks. don't get me wrong i'll have an occasional burger and fries i mean hey that's the american meal right lol!!

Chocolate Chip Cookies


Number of Servings: 36
Serving Size: 1 cookie

Ingredients
Name Measure Weight
all-purpose flour 1 1/2 cups ---
baking soda 1/2 tsp ---
salt 1/4 tsp ---
stick margarine 1/2 cup ---
powdered sugar 1/2 cup ---
firmly packed light brown sugar 1/4 cup ---
egg 1 ---
unsweetened applesauce 1/4 cup ---
low-fat (1 percent) milk 2 tbsp ---
vanilla extract 2 tsp ---
chocolate chips 1/2 cup ---
Preparation Instructions
1. Preheat the oven to 350 degrees F. Spray 2 baking sheets with nonstick cooking spray.
2. In a small bowl, whisk together the flour, baking soda, and salt.
3. In a large bowl, with an electric mixer at mediium speed, beat the margarine until fluffy. Add the sugars, egg, applesauce, milk, and vanilla and beat 1 minute. Slowly add the flour mixture and beat until combined, about 1 minute. Stir in the chocolate chips.
4. Drop the dough by teaspoonfuls onto the prepared baking sheet. Bake until lightly browned, 14-16 minutes. Remove and cool on a baking rack.

Smothered Greens

These healthy greens get their rich flavor from smoked turkey, instead of fatback.

Yield: 5 servings
Serving size: 1 cup

3 cups water
1/4 lb smoked turkey breast, skinless
1 tbsp fresh hot pepper, chopped
1/4 tsp cayenne pepper
1/4 tsp cloves, ground
2 cloves garlic, crushed
1/2 tsp thyme
1 stalk scallion, chopped
1 tsp ginger, ground
1/4 cup onion, chopped
2 lb greens (mustard, turnip, collard, kale, or mixture)

1. Place all ingredients except greens into large saucepan and bring to boil.

2. Prepare greens by washing thoroughly and removing stems.

3. Tear or slice leaves into bite-size pieces.

4. Add greens to turkey stock. Cook for 20 to 30 minutes until tender.

Each serving provides:

Saturated fat: less than 1 g

Zucchini Lasagna

Say cheese. This healthy version of a favorite comfort food will leave you smiling.

Yield: 6 servings
Serving size: 1 piece

1/2 lb lasagna noodles, cooked in unsalted water
3/4 cup part-skim mozzarella cheese, grated
1 1/2 cups fat-free cottage cheese*
1/4 cup Parmesan cheese, grated
1 1/2 cups raw zucchini, sliced
2 1/2 cups no-salt-added tomato sauce
2 tsp basil, dried
2 tsp oregano, dried
1/4 cup onion, chopped
1 clove garlic
1/8 tsp black pepper

*Use unsalted cottage cheese to reduce the sodium content. New sodium content for each serving is 196 mg.

1. Preheat oven to 350 degrees F. Lightly spray 9- by 13-inch baking dish with vegetable oil spray.

2. In small bowl, combine 1/8 cup mozzarella and 1 tablespoon Parmesan cheese. Set aside.

3. In medium bowl, combine remaining mozzarella and Parmesan cheese with all of the cottage cheese. Mix well and set aside.

4. Combine tomato sauce with remaining ingredients. Spread thin layer of tomato sauce in bottom of baking dish. Add a third of noodles in single layer. Spread half of cottage cheese mixture on top. Add layer of zucchini.

5. Repeat layering. Add thin coating of sauce. Top with noodles, sauce, and reserved cheese mixture. Cover with aluminum foil.

6. Bake for 30 to 40 minutes. Cool for 10 to 15 minutes. Cut into 6 portions.

Each serving provides:

Total fat: 5 g
Saturated fat: 2 g
Cholesterol: 11 mg
Sodium: 380 mg
Total fiber: 5 g
Protein: 19 g
Carbohydrates: 41 g
Potassium: 561 mg
